Chicken nuggets at home!
This dish is courtesy of our oldest daughter's once-upon-a-time boyfriend's mother, hence the name of the dish, "Chicken a la Rhoda". It's quick and easy and delicious. My family loved it at first bite, from toddlers to teens as well as the adults. We still love it, 17 years later.
Start with boneless skinless chicken breasts, and cut into nugget-sized pieces. Dip into the following:
1. An egg beaten with a splash of milk, then
2. A sleeve of saltine crackers, crushed fine. Generic works just fine. Do not add salt; the amount in the crackers is sufficient. If you wish, you can buy unsalted crackers, but we think the salted tops are perfect.
Isn't that easy?
Then fry in cooking oil until they are golden brown and cooked through. It doesn't take long. Turn once to brown the tops. Drain on paper towels. Serve with your favorite dipping sauce (BBQ sauce/honey mustard/sweet and sour sauce/ranch dressing/or ?). Eat and enjoy.
