Homemade pectin

I am always on the lookout for things I can make at home instead of buying them at the store. In the summertime I make jelly and jam, and try to keep several boxes of pectin on hand so I will have it when needed. Sometimes it is hard to find at the store when I want it.

In the past I've saved apple cores and peels and made jelly from them. I didn't add pectin because apples are full of natural pectin. The jelly was set just the way I like it: not too firm and not too soft, it was "just right" as Goldilocks would say.
