Convenience Foods

When I make chili, or tacos, or some other dish that requires a mix of spices, I make more than one "batch" of the dry ingredients. Tonight when I make chili, I will make three batches of the spices needed instead of just enough to make tonight's meal. I save empty spice jars for this purpose, and label them quickly with a post-it note and a rubber band. ~smile~ It will take a few more minutes tonight, but the next two times I make chili it will be a time-saver. (Honestly, Hamburger Helper is just a box with all the ingredients premeasured for you, right?)

Several little jars with cute labels, each filled with a different spice mix would make a nice gift, wouldn't they?

Pre-packaged spice mixes are so expensive at the grocery store, and contain such a high amount of salt. You can make similar packets at home for pennies, and can modify the ingredients to your taste and your health. Use sandwich bags if you don't have empty spice jars. Label them - don't trust your memory.

The following recipe is one that I've adapted over several years to suit my family's tastebuds. The original came from somewhere on the internet, but after all the modifying I've done, I consider this "my" recipe. Whether you try this one, or use your own favorite, I encourage you to make your own convenience foods - in this case, spice packets.

Chili Seasoning
Add to one batch of chili

1/8 tsp cayenne pepper
1/4 tsp paprika
1 1/4 tsp chili powder
1/4 tsp salt
1/4 tsp garlic salt
1/4 tsp onion powder
1/8 tsp garlic powder
1/4 tsp oregano
pinch of cumin
1 Tbsp cornmeal or flour
