If you've been reading this blog for long you'll know that winter is not my favorite season (but it's not my least-favorite season either!). Even though we live in the southern part of the US, it's cold and dreary and grey outside. Maybe you'd be surprised to know that we have our share of below-freezing days in Oklahoma.

But my mission is to celebrate the simple, ordinary days of my life, so I'm looking for joy in January. My fuzzy green blanket and a cat on my lap, a good book, and warm, homemade soup for dinner - that's an ordinary day I can enjoy.

Start with quality ingredients


Many soups start with chicken broth. While you can use a can or a carton from the grocery store, it's easy to make your own chicken broth. Homemade broth has great depth of flavor and you know exactly what it's made with - no preservatives or ingredients you can't pronounce.

You can either pressure-can your homemade broth or freeze it. To use frozen broth, run the container under hot water until it releases from the container sides and dump it in the soup pot; it will thaw as the pot warms up.
